Creamy Butterbean Mash
A creamy and luxurious buttery mash recipe with goat cheese and chive flavors! Buttered Bean Mash is a low-carb, high-protein alternative to mashed potatoes and this decadent goat and chive mash will have you completely seduced.
- 1 lb (500 g) cooked butter beans
- 2 garlic cloves, peeled and crushed
- 1 lemon, squeezed and zested
- 30 ml (1 tbsp.) Olive oil
- 2 onions, peeled and finely chopped
- 1 sprig of rosemary
First, gently sauté the onion, garlic and rosemary in the oil until the onions are tender and cooked through.
Then, add the butter beans to the pan, mix and heat.
Drizzle with lemon juice and stir in the zest.
Crush the beans manually. Otherwise, pour half of the mixture into a food processor and blend until smooth, incorporating the rest of the butter bean mixture.
