Creamy Turkey Dumpling Soup

Creamy turkey Dumpling soup is the perfect way to use up Thanksgiving leftovers. It's filling, full of veg and easy to prepare. And the best part is the light, fluffy dumplings.


  • 3 cups of mixed vegetables
  • 1 tablespoon of olive oil
  • 2 cups chopped cooked turkey
  • 1 chopped onion
  • 8 cups turkey or chicken broth
  • ½ teaspoon of poultry seasoning

Potato dumplings

  • 1 large egg
  • 1 ½ teaspoon of baking powder
  • salt to taste
  • 1 ½ cup all-purpose flour
  • 1 pkg. Bob Evans Garlic Mashed Potatoes
  • 1 tablespoon of fresh parsley


First, cook onion in olive oil over medium heat until softened, about 4 minutes.

Then, add the rest of the soup ingredients and simmer for 15 minutes.

Meanwhile, combine all the dumpling ingredients in a medium bowl and toss well with a fork to form a paste. The dough should be quite soft but not watery.

While the soup is boiling, drop the dough by heaping tablespoons on top of the soup. Also simmer until they float to the top, about 7 minutes.

Remove with a slotted spoon and repeat with the remaining meatballs.

To serve, place the meatballs in the bottom of a soup bowl and pour the soup over them. Happy Cooking Time.
