Easy One Pot Mexican Rice






This One Pot Mexican Rice is a regular meal here, it's a simple, versatile and tasty meal. Using the same measurements, I often change the combination of vegetables depending on what I have on hand.

INGREDIENTS

  • 1/4 cup tomato sauce
  • 1 cup long grain rice I used basmati rice
  • 2 cups of broth *
  • salt if needed
  • 2 garlic cloves, diced
  • 2 tablespoons of vegan butter
  • 1/2 teaspoon of cumin

INSTRUCTIONS

First, melt the butter in a skillet over medium-high heat. Add the rice and garlic and lower the heat to medium. Cook until the rice smells of toast (about 2-3 minutes), stirring frequently so it does not burn.

Then, add the broth, tomato sauce and cumin to the pan. Bring to a boil. Cover and lower the heat.

Cook for 15 to 20 minutes or until all liquid is absorbed. Peel the rice with a fork. Taste and add salt if necessary. Happy Cooking Time.

NOTE

* You can use your favorite broth. The type of broth you use will determine whether you need to add salt at the end.
