Hot Cocoa Cookies - These sticky hot chocolate cookies are complete with big gooey marshmallows and chunks of melted dark chocolate. It's the perfect cookie recipe for the holidays and winter!


  • 1 1/2 cup flour
  • 1/4 teaspoon of salt
  • 1/4 cup unsweetened cocoa powder
  • 3 eggs at room temperature
  • 1 1/2 teaspoons of baking powder
  • 1 1/4 cups packed light brown sugar
  • 1 1/2 teaspoon pure vanilla extract
  • 1 stick of unsalted butter 1/2 cup
  • 12 oz semi-sweet chocolate bars or semi-sweet chocolate chips
  • 30 marshmallows
  • 7.5-ounce semi-sweet chocolate bars cut into 1/2-inch squares for garnish


First, in a medium saucepan, melt butter and chopped chocolate over medium-low heat, stirring frequently. Once melted, remove from the burner and let cool for 15 minutes.

Then, in a medium bowl, whisk together the flour, cocoa powder, salt and baking powder. Put aside.

In a blender, combine the eggs, brown sugar and vanilla until smooth. Add the cooled melted chocolate. And finally, add the dry flour ingredients in two batches into the dough. The dough will almost be like a thick cake batter. Leave to cool in the refrigerator for an hour so that the dough forms easily.

When the dough has cooled, line baking sheets with parchment paper. Roll the dough into 1 inch balls and place them 2 inches apart on the parchment paper. Lightly flatten the tops.

Bake at 325 degrees for about 12 minutes or until the edges of the cookies begin to crack. While baking, cut the marshmallows in half and glue a square of chocolate on each of the cut sides.

Once the cookies are baked, take out of the oven and stick a chocolate marshmallow side in each cookie. Return to the oven for about 4 minutes until the marshmallows are tender. Remove from oven and transfer to cooling racks to cool. Grate extra chocolate on top for extra topping. Happy Cooking Time.
