OLD FASHIONED BUTTER TARTS
Old fashioned butter tarts, the best homemade Canadian recipe, with the perfect idea for a topping, dessert or sweet snack.
INGREDIENTS
Shell pie crust
- 1 teaspoon of salt
- 1 tablespoon of sugar
- 2 2/3 cups all-purpose flour
- 1 cup butter, cooled and cut into pieces
- 1 / 4-1 / 2 cup ice water
Butter pie filling
- 1 teaspoon of vanilla
- 1/2 cup packed brown sugar
- pinch of salt
- 1/2 cup soft butter
- 1/2 cup golden corn syrup
- 2 eggs, lightly beaten
INSTRUCTIONS
Butter pie dough
First, sift together the flour, salt and sugar.
Then, using a pastry blender, cut the butter into the flour mixture until it looks like a serving meal.
Gradually add cold water until the dough begins to stick. (too much water will give a hard paste).
Press the dough and form a disc.
Wrap in plastic wrap and refrigerate for at least 30 minutes.
Roll out the pie dough and cut 16 4-inch circles.
Press the dough into muffin cups (try not to stretch the dough).
Refrigerate until filling is prepared.
Butter pie filling
In a large bowl, combine the butter, brown sugar and corn syrup. Stir until the butter is creamy and the sugar has dissolved.
Add the eggs, vanilla and a pinch of salt. Mix well.
Fill the pie shells with the filling.
Bake in 400F oven for 15-20 minutes.
The filling should be lightly browned and still bubbling.
Let the pies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Happy Cooking Time.
