For the bread:

  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 cup of freshly squeezed orange juice
  • the zest of an orange
  • 4 oz. (113 g) butter, softened at room temperature
  • 2 teaspoons of baking powder

For the orange syrup:

  • 1 cup of sugar
  • 1 cup of water
  • zest of one orange, thinly sliced (or grated)

The bread:

First, preheat the oven to 350 ° F. Grease a 9 × 5 inch loaf pan.

Then, in a large bowl, using an electric mixer, whisk the eggs and sugar until pale and creamy. Stir in the orange zest, orange juice, butter and vanilla extract.

Sift the flour and baking powder, then incorporate them delicately with a rubber spatula until incorporated.

Pour batter into loaf pan and bake for about 50 minutes or until a toothpick inserted in the center comes out clean.

Orange syrup:

Put the orange zest, water and sugar in a small saucepan. Bring to a boil, lower the heat and cook, stirring occasionally, until the syrup thickens slightly.

As soon as the bread comes out of the oven, prick the surface with a thin skewer and pour half the syrup on top. Leave to soak and cool. Take the bread out of the pan and drizzle with the remaining syrup. Happy Cooking Time.
