 Pumpkin Spice Cupcakes

These easy cupcake recipes are the right introduction to falling! With its spicy spices and deep pumpkin flavor, this pumpkin spice cupcake goes great with a cup of hot cider!


3/4 cup mashed pumpkin

2 eggs

1 cup sugar

1/2 cup oil

1 1/2 cups flour

1 teaspoon bicarbonate of soda

2 teaspoons of cinnamon

1 teaspoon grated fresh ginger

1/4 teaspoon cloves

1/2 teaspoon sea salt

For the icing:

6 ounces of low-fat cheese at temperature

1/3 cup unsalted butter at temperature

4 cups powdered sugar

2-3 teaspoons of milk

turbinado sugar for optional garnish


For cupcakes:

1.Preheat your oven to 350 degrees Fahrenheit and prepare a 12 muffin tin with liner paper.

2.Combine the pumpkin puree, eggs, sugar and oil during a large bowl and beat until well combined.

3.In another bowl, beat all dry ingredients (flour, bicarbonate of soda , seasonings, and salt), then pour the dry ingredients into the wet ingredients.

4.Using a rubber spatula or wooden spoon, mix the wet and dry ingredients together until they're well blended and therefore the flour is gone.

7.Divide the mixture evenly between the 12 muffin cups lined with paper cups until all the dough is evenly distributed.

8.Bake the cupcakes at 350 degrees for about 20 minutes, or until a toothpick inserted within the center of 1 of the cupcakes comes out clean.

9.When ready, the pumpkin cupcakes and seasonings are going to be pretty and fluffy, with a stunning brown color.

10.Remove the cupcakes from the pan and place them on a wire rack until they cool completely while you prepare the frosting.

For the icing:

11.Combine temperature cheese and temperature butter at high speed within the bowl of your stand mixer (a hand mixer works great for this too!).

12.Add powdered sugar , one cup at a time, swiping the bowl between each additions to form sure they're completely combined. Add the milk one teaspoon whenever , ensuring to watch the feel of the frosting. If your frosting is soft enough, you'll only need 2 teaspoons of milk. After the milk has been added, continue stirring at high speed until the frosting is light and fluffy (about 2 more minutes).

13.Once the cupcakes have cooled completely to temperature , spread the frosting during a circular motion over each cupcake using the tip of your choice (or just spread it out, if that is what you prefer).

14.Sprinkle a touch turbinado sugar on each cupcake to embellish and serve!
