SYN FREE BEEF AND POTATO CURRY






So tasty, this slow cooking spicy beef curry is amazing.

INGREDIENTS

  • 1 onion, finely chopped
  • 1 green chili, chopped
  • 2 teaspoons of grated ginger
  • 500g / 17.5oz stewing beef, raw
  • 400g / 14oz baby potatoes, halved
  • 1 tablespoon of ground coriander
  • 4 cloves
  • 1 tablespoon of cumin seeds
  • 1 cup / 240 ml passata
  • 1 teaspoon of garam masala
  • 4 cardamom pods
  • 4 Roma tomatoes, peeled and chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon of turmeric
  • 1.5 cups / 360 ml beef broth (or can use water)
  • a few handfuls of chopped spinach
  • spray oil
  • salt and black pepper

INSTRUCTIONS

First, spray a deep saucepan over medium heat with spray oil

Then, add onion and sauté until softened

Add the garlic, ginger, cumin seeds and turmeric and sauté for a few more minutes.

Add the cilantro, cloves, chili, cardamom pods, garam masala and chopped tomatoes with the beef and stir until well coated.

Add the broth and passata, bring to a boil, reduce the heat to low then cover and simmer for 1 hour 30 minutes. Check halfway, to see if you need a little more stock.

Add the potatoes for the last 30 minutes of cooking.

Once ready Add the spinach and mix well.

Season as needed with salt and black pepper

Serve with your choice of side.
