EASY SHRIMP AND BROCCOLI STIR FRY
This shrimp and broccoli stir-fry is perfect for those busy nights when you need a fresh dinner on the table in no time. This meal is done in just 20 minutes!
INGREDIENTS:
- 24 ounces of broccoli florets *
- 1 green onion, thinly sliced
- 1 1/2 pounds of medium shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 1 teaspoon of sesame seeds
FOR THE SAUCE
- 1 tbsp brown sugar, packed
- 2 tablespoons of oyster sauce
- 1 tablespoon of freshly grated ginger
- 1 teaspoon of sesame oil
- 2 garlic cloves, minced
- 1 teaspoon of cornstarch
- 3 tablespoons reduced sodium soy sauce
- 1 tablespoon of rice wine vinegar
- 1 teaspoon of Sriracha, optional
DIRECTIONS:
First, in a small bowl, whisk together soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, garlic, sesame oil, cornstarch and sriracha, if using ; put aside.
Then, heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook, stirring occasionally, until pink, about 2-3 minutes. Add the broccoli and cook, stirring frequently, until tender, about 2-3 minutes.
Stir in soy sauce mixture until well combined and slightly thickened, about 1 to 2 minutes.
Serve immediately, garnished with sesame seeds and green onion, if desired. Happy Cooking Time.
NOTES:
* 24 ounces of broccoli florets equals approximately 5 cups.
