2 sticks unsalted butter, softened, 1/2
2 tablespoons of spicy El Yucateo Green Habanero sauce
2 tablespoons chopped parsley
1/2 teaspoon kosher salt
1/4 teaspoon fresh pepper
3 dozen medium to large oysters
Turn on the grill. Combine soft butter, Habanero sauce, salt and pepper until combined. Transfer the butter mixture to a sheet of wrapping and roll it into a 2 inch thick log. Cool until the butter hardens, about quarter-hour . Slice butter into 36 pieces.
Place the oysters on the recent grill, flat side up. Cover the grill and cook until the oysters are open, about 5 minutes. Using tongs, transfer the oysters to a plate, being careful to stay the liquid within the shell.
Remove the highest shell and separate the oysters from rock bottom shell. Sprinkle each oyster with a touch Habanero butter and return the oysters to the grill. Cover the grill and cook until the butter is melted and therefore the oysters are fully heated, about 1 minute. Serve immediately.
