Made from marbled layers of brownie dough and chocolate chip cookie dough, brookies are a treat for all ages.


Cookie layer

  • 1 medium egg
  • 225 g plain flour
  • 125 g light brown sugar
  • 1/2 teaspoon of salt
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon of cornstarch
  • 150 g of milk chocolate chips
  • 115 g unsalted butter
  • 1/2 teaspoon baking soda

Brownie Layer

  • 2 medium eggs
  • 100 g unsalted butter
  • 25g cocoa powder
  • 140 g of caster sugar
  • 150 g of milk chocolate chips
  • 100 g dark chocolate
  • 50 g plain flour


For the cookie layer

First, beat together butter and sugar until light and fluffy!

Then, add the egg and vanilla and beat again until smooth.

Add the flour, baking soda, salt and cornstarch and beat until a cookie dough forms!

Add chocolate chips, mix and press into bottom of 9x9-inch square pan, lined with parchment paper.

Freeze for 20 minutes!

For the brownie layer

First, preheat oven to 180c / 160C Fan.

Then, melt your dark chocolate with your butter until smooth.

Whisk together the eggs and sugar into a thick foam like a mixture, then stir in the melted chocolate mixture.

Add the flour and cocoa powder and fold over again.

Mix the chocolate chips thoroughly and pour the batter over the frozen cookie dough.

Bake the Brookies in the oven for 25 to 30 minutes or until cooked through. Sometimes it can take a little longer! There should be a slight wobble in the mixture.

Let cool in your box for 10 minutes, then carefully remove and finish cooling on a wire rack. If you wish, you can then chill the cooking in the fridge for about 3 hours to help create the melt-in-the-mouth texture.

Cut into your portions and enjoy!


I think it's important to freeze cookie dough, to help brookies bake better. It is optional though! If you want, you can put the cookie layer in the fridge for an hour instead of the freezer for 20 minutes!

These will easily last 4 to 5 days, if not longer if they are not already consumed!

You can use any flavor of chocolate chips!
