This chicken and lime soup is light, fresh and flavorful with grated chicken, vegetables, fresh cilantro and a tangy lime infused broth.


  • salt pepper
  • 1 stalk of celery, diced
  • 1 cooked chicken breast, grated
  • 2 garlic cloves, minced
  • 1 carrot, peeled and diced
  • zest of 1 lime
  • 1 jalapeño pepper, seeded and diced
  • 4 cups of chicken broth
  • handful of chopped cilantro
  • 1 tablespoon of rice vinegar
  • juice of 1 lime
  • 1/4 teaspoon cumin
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, diced
  • 1 tablespoon of fresh ginger, minced


First, in a large saucepan, heat olive oil over medium-high heat.

Then, once hot, add the onion, carrot, celery, and jalapeño and sauté for about 5 to 8 minutes until they soften and begin to brown.

Add the garlic, ginger, cumin, salt and pepper and sauté for another 1 to 2 minutes.

Add the lime zest and chicken broth, let the mixture boil then reduce to a boil for 15 minutes.

Add the grated chicken, cilantro, vinegar and lime juice and toss to combine.

Remove from heat, serve hot and garnish with additional cilantro.
