COKE CHICKEN
The original recipe uses ketchup or sometimes even soy . But it's loved by many of us due to the soft boiled chicken pieces you get with this delicious sauce.
INGREDIENTS
8 boneless, skinless, raw chicken thighs (approx. 600 g / 21 oz)
1 can of diet coke
1/2 cup (120 mL) ingredient (puree)
2 tablespoons of balsamic vinegar
1 cup (240 mL) chicken broth
1/2 teaspoon garlic powder
salt and black pepper for seasoning
chopped fresh Italian parsley
optional: add 1/4 teaspoon cayenne pepper for a touch heat or 1/2 tablespoon smoked paprika for that smoky taste
INSTRUCTIONS
Stove:
1.Add coke, ingredient , balsamic vinegar, garlic powder and chicken broth to a deep skillet and blend thoroughly.
2.Place on the chicken thighs.
3.Bring to a boil, then reduce heat (medium-high (and simmer (not simmer)) until the sauce reduces to a thick sauce that coats the chicken (about 20 minutes))
4.Season as required with salt and black pepper
5.Sprinkle with freshly cut Italian parsley .
6.Serve together with your choice of side

Slow cooker:
1.Add all ingredients to the slow cooker
2.Cook over high heat for 4 hours or low for 8 hours
3.Once cooked, remove the chicken carefully employing a slotted spoon
4.Add the sauce to a saucepan and simmer over medium heat to scale back the specified consistency, then pour over the chicken.
5.Season as required with salt and black pepper
6.Serve with a entremots of your choice.
