Easy Homemade Lamingtons

Easy homemade sponge cake dipped in chocolate and covered with coconut.


For the cakes

  • 3 large eggs
  • 3/4 cup (150 g) light brown sugar
  • 3 cups (180 g) dried coconut
  • 1 teaspoon of vanilla extract
  • 3/4 cup (170 g) unsalted butter, softened
  • 1 and 1/2 cups (187 g) all-purpose flour

For the chocolate icing

  • 1/3 cup (80 mL) milk
  • 1 tablespoon of boiling water
  • 1 cup (125g) icing / powdered sugar
  • 1 tablespoon of cocoa powder
  • 3/4 cup (130 g) chocolate (milk, dark or semi-sweet), roughly chopped
  • 2 tablespoons (28g) unsalted butter


For the cakes

First, preheat oven to 350 ° F / 180 ° C / gas 4. Line an 8 x 8-inch square pan with foil or parchment paper and set aside.

Then, beat together butter, sugar and vanilla until light and fluffy.

Add an egg and half the flour and beat well until combined. Add the remaining eggs and flour and beat until well combined.

Pour the dough into the prepared pan and spread it evenly. Bake for 25 to 30 minutes or until a toothpick inserted in center comes out clean.

Let the cake cool in the pan for 5 minutes before turning it over on a wire rack to cool completely.

For the chocolate icing

First, add chocolate, butter and milk to a microwave-safe bowl and heat every 30 seconds, stirring after each, until melted and smooth.

Then, stir in the icing sugar, cocoa powder and boiling water until smooth and blended.

Cut the cake into 16 bars. Gently dip a cake bar into the chocolate frosting, making sure all sides are coated well, then dip into the coconut. Transfer to a baking sheet lined with parchment paper and repeat with the remaining cakes.

Let the cakes set at room temperature or in the refrigerator before serving. Happy Cooking Time.
