Really Quick Broccoli Pasta
It's a great emergency meal OR a carb + veg side for any time your cupboards are empty except broccoli, pasta, and some sort of cheese. Quick and utterly delicious - loaded with tons of broccoli!
Ingredients
- 1 cup olive oil
- 3/4 teaspoon of salt
- 1 pound of pasta
- 1/2 teaspoon of black pepper
- 3 tablespoons of lemon juice
- 1/4 teaspoon crushed red pepper flakes, optional
- 1 pound of broccoli, cut into bite-size pieces
- 6 garlic cloves, thinly sliced
- 1 cup of white wine or chicken broth
- 1/2 cup Parmesan, finely grated
Instructions
First, fill a large pot with water and bring to a boil over high heat. Add a little salt, then add the broccoli florets and cook until tender, about 6 minutes. Drain the broccoli and set aside until needed.
Then, bring a large pot of water to a boil over high heat. Add a little salt, then add the pasta and cook until al dente, about 9 minutes for most brands of pasta.
While the pasta is cooking, prepare your sauce. In a large sauté pan, heat olive oil over medium heat. Add the garlic and chili flakes (if using) and cook for 1 minute or until the garlic is fragrant and begins to sparkle. Add broccoli and wine (or chicken broth). Season with salt and pepper and simmer over medium-low heat for 8 minutes.
Drain the pasta and return it to the pot. Increase the heat to medium-high and stir in the broccoli sauce. Add cheese and lemon juice and mix well. Taste and add more salt and pepper if needed.
Transfer to a large serving platter and serve immediately!
