 strawberry babka



babka. Sweet and crooked yeast bread. What's to not like? it makes the right sweet breakfast or brunch, tea snack or maybe a delicious dessert. i really like good multi-use recipes.


INGREDIENT:

babka pasta

2 teaspoons instant yeast

3 cups flour

1/4 cup plus 2 tbsp. Tablespoon of sugar

1/2 teaspoon salt

1/3 cup hot milk (approx. 110 degrees)

3 eggs, divided

1/2 teaspoon vanilla

1/2 cup butter, at temperature , dig small pieces

Strawberry filling

1 cup strawberry preserves

pinch of cinnamon (optional)

2 tablespoons cornstarch

2-3 tablespoons strawberry preserves (for brushing against toast)

Icing

1 cup granulated sugar

1 to 2 tablespoons of milk

1/2 teaspoon clear vanilla

1 pinch of salt


INSTRUCTIONS

1.In a bowl of a standing mixer, combine the leaven , flour, sugar and salt

2.Add milk, 2 eggs and vanilla, stir over low heat employing a dough hook until the dough starts to return together. if the dough is just too dry, add another 1 to 2 tablespoons of milk

3.add butter one at a time, ensuring the butter is evenly mixed before adding more

4.knead at medium speed until the dough falls off the edges of the bowl; the dough should be smooth and elastic

5.place the dough during a greased bowl, cover and let it rise to double (this may take 1 1/2 to 2 hours)

6.make the strawberry filling while expanding the dough -

7.Combine canned strawberries, cinnamon (if using), and cornstarch

8.Cook over medium heat (about 5 minutes), let cool then chill for a minimum of half-hour

9.Once the dough has expanded, roll it into 12-inch by 16-inch rectangles

10.Beat remaining eggs with 1 tablespoon of water and grease the sides of the dough

11.spread the strawberry filling over the dough, leaving a 1-inch border

12.starting with the short end of the rectangle, roll out the dough, ensuring to press the sides

13.cut the dough in half lengthwise and wrap the pieces together

14.Place the babka slices on a baking sheet lined with parchment paper

15.cover and let rise to double again - about 1 hour

16.Preheat oven to 350 degrees

17.bake for half-hour , cover with foil and bake for an additional half-hour

18.spread hot bread with strawberry preserves

19.chill during a saucepan for quarter-hour , remove and funky completely on a wire rack

20.To make icing, beat granulated sugar , milk, vanilla and salt

21.Spread icing on cold bread
