The healthier classic Cajun, the addition of prawns turns this "dirty brown rice" into a wonderful main course. i would like to consider it like Chinese fried rice with cajun prawns. With Mardi Gras ending tomorrow i assumed it might be an excellent time to share this recipe from the archives because i really like this dish!


1 1/2 cups raw rice

chicken stock cubes, Knorr

2 bay leaves, split

1/8 + 1/4 tsp. Cayenne pepper, split

1/8 + 1/2 teaspoon paprika

1/8 + 1/2 teaspoon thyme

1 teaspoon of oil

1 onion, diced

2 celery, diced

1 green bell pepper, diced

1 clove , chopped

1/2 lb 96% lean hamburger , Laura lean beef

salt and fresh pepper, to taste

1 lb medium shrimp, peeled and discarded

2 spring onions, chopped


1.Cook rice consistent with package directions in water with chicken broth , 1 herb and 1/4 tsp. Salt and 1/8 salt, cayenne pepper, paprika and thyme.

2.When the rice is nearly done cooking, heat an outsized heavy saucepan over medium-low heat.

3.Add oil, onions, green peppers, celery, bay leaves and garlic. Saute over medium-low heat until tender, about 5 minutes.

4.Add beef, salt, black pepper, remaining paprika, thyme and germander speedwell chilies.

5.Saute until golden, about 10 to fifteen minutes; add shrimp, cover and cook for an additional 5 minutes.

6.When the rice is cooked, mix it with beef and shrimp and blend well. Garnish with spring onions and serve.
