Chocolate Chip Banana Mini Muffins
An easy recipe for tender bite-size banana muffins full of rich chocolate chunks. They are secretly healthy and contain only 45 calories!
- 2 eggs
- 3 ripe bananas
- 2 cups of flour
- 1/2 cup butter or margarine, softened
- 1/2 teaspoon of salt
- 2 teaspoons of baking powder
- 1 1/2 cup chocolate chips
- 1 cup of white sugar
- 1/4 cup half and half cream
- 1/2 teaspoon of baking soda
First, preheat the oven to 350F
Then, using a stand mixer, cream the butter and sugar together. Add the eggs, bananas and cream. Mix until quite smooth.
In another bowl, whisk together the flour, baking powder, baking soda and salt.
Slowly mix the dry ingredients with the wet ingredients until they are well combined and no more dry flour is visible. Add the chocolate chips.
Pour batter into greased mini muffin cups. Try to make sure the batter is evenly distributed among the 48 mini muffin cups.
Bake 13 to 16 minutes or until a toothpick comes out clean. Let cool on rack. Happy Cooking Time.
