Greek Easter Bread


 Greek Easter Bread



Tsoureki or Greek Easter Bread is an enriched sweet bun, almost like brioche. The delicious taste comes from the fruit juice and spice called Mahlab. This soft and chewy bread is ideal for breakfast.


INGREDIENTS

Make 2 slices of bread

9-10 cups of bread flour, divided (1080 to 1200 grams)

4 teaspoons instant dry yeast

1 1/2 cups sugar, divided (300 grams)

2 cups hot milk (472 grams)

2 teaspoons ground Mahlab (optional)

8 tablespoons butter, melt and chill

5 eggs (room temperature) beaten well

1 teaspoon salt

2 tablespoons grated orange rind

1 tablespoon grated lemon peel

Decoration

1 beaten egg

4 to six immersed boiled eggs

¼ cup of flaked almonds


INSTRUCTIONS

1.Add 2 cups flour, all leaven and 1/2 cup sugar to a bowl. Then add the recent milk and stir (by hand or a really "> during a blender) until all the lumps are gone (you will get a very smooth dough). Cover the bowl and let stand 30 to 45 minutes. this may expand the sponge and provides the yeast an honest start.

2.Add melted butter and eggs, mix well. Pour 5 cups (600 grams) of flour, salt, 1 cup remaining sugar, ground Mahlab, orange and lemon peel over the mixture and blend well to mix all ingredients. Slowly add the remaining 2 to three cups of flour to the dough and knead for about 10 minutes. If you are not employing a stand mixer, turn the dough onto a floured surface and knead it by hand. The dough are going to be very soft and sticky but are going to be easier to figure with after an extended kneading. it'll also become stronger once proven. If you're tempted to feature more flour, await it to prove.

3.Form a ball and place during a lightly greased bowl. Cover with a clean cloth and let it rise for 1 hour 30 to 2 hours.

4.Place the dough on a floured surface . Divide into 6 equal portions, roll each section into 15 "long ropes. for every loaf, braid 3 ropes, then press the eggs into each braid. Save the loaves to rise again for 1 hour on greased pan.

5.Preheat oven to 350. Brush the bread with beaten egg, sprinkle with almonds and bake in oven until golden, 40 to 50 minutes.
