Hot cross bun loaf







This gluten-free vegan loaf bread is chewy, fruity and subtly spicy. It's easy to do and perfect for Easter! In addition, it is without yeast and without kneading!

Ingredients

  • 50 g caster sugar
  • 1 medium egg, beaten
  • 500g strong white flour, plus extra dusting
  • 1 tbsp. mixed spices
  • 7g packet of fast-acting yeast
  • 125 ml milk
  • 50 g of butter, plus extra for greasing
  • 250g jumbo raisins and cranberries, see GH Tips

For the crosses

  • 3 tbsp flour

Instructions

First, in a small saucepan, heat the milk with 125 ml (4 fl oz.) Of water until small bubbles appear around the inner rim of the saucepan. Remove from the heat, chop the butter and stir into the mixture. Set aside to cool until just hot.

Then, using a stand mixer fitted with a dough hook (or a large bowl and a wooden spoon), briefly mix the flour, sugar, baking powder, spices and ½ tbsp. of fine salt. Stir in the milk mixture and the egg to obtain a soft but not sticky dough. Continue to knead in the machine for 5 min (or for 10 min by hand on a lightly floured work surface) until it is smooth and elastic.

If you are working by hand, return the dough to a large bowl. Cover the bowl with greased plastic wrap; let rise in a warm place for 1 hour, or until doubled in size.

Grease a 900 g (2 lb) loaf pan. Scrape the dough on a lightly floured work surface and stir in the dried fruits. Divide into 8 equal pieces and form balls. Place in the base of the tin and cover the tin with greased plastic wrap. Let rise in a warm place for 45min-1h, until the dough is just above the top of the mold.

Preheat the oven to 200 ° C (fan 180 ° C), mark 6. Just before baking, make the crosses by mixing the flour with enough cold water to form a smooth, thick but ductable mixture. Pipe crosses the buns. Bake for 30 minutes, then cover with foil to avoid browning more and bake for 10 more minutes. To check if the bread is done, gently remove it from the tin and press down on the bottom - it should look hollow.

Remove from pan and let cool on a wire rack. Slice and serve with butter. Happy Cooking Time.
