Lemon Magic Custard Cake
Magic Lemon Cake - A simple dough that turns into a 3 tier cake - pure magic. The ever popular magic cake, now with a lemon flavor!
- 3/4 cup sugar
- 1/4 cup lemon juice
- 1 cup of melted butter
- 3/4 cup all-purpose flour
- 4 eggs, room temperature
- 1 tablespoon of lemon zest
- 2 cups of milk, lukewarm
First, preheat the oven to 160 ° C. Line a square cake pan with baking paper and set aside.
Then, separate the eggs by adding the egg yolks to a large mixing bowl. Add egg whites to the bowl of a stand mixer and beat until stiff peaks form. Set the egg whites aside.
Add the sugar to the bowl with the egg yolks and whisk until well combined. Add the melted butter, lemon zest and lemon juice and whisk again. Gradually add the flour, beating well between each addition, then repeat with the milk.
Gently fold the egg white into the egg yolk mixture. Pour the batter into the prepared cake pan and bake for 45 minutes or until the cake is golden brown. Let cool completely in the tin.
Remove cake from pan and sprinkle with icing sugar if desired before serving. Happy Cooking Time.
