3 cups mango, finely diced
1/3 cup chopped shallots
1 jalapeno chili pepper and ribs, then thinly sliced
1 red bell pepper, remove seeds, remove seeds and finely dice
1/2 cup chopped cilantro
2 tablespoons of juice
