The Best Banana Cake

This is the best chewy banana cake from scratch. Easy banana cake recipe. Crash proof, light, fluffy and you can do it at home!


  • 1 ½ cup of milk
  • ¼ teaspoon of salt
  • 3 cups of flour
  • 1 cup of mashed bananas
  • 3 large eggs
  • ⅔ cup of softened butter
  • ½ cup brown sugar
  • 1 teaspoon and a half of baking soda
  • 1 teaspoon of vanilla
  • 2 ½ tablespoons lemon juice divided
  • 1 cup of white sugar


  • 3-3 ½ cups powdered sugar
  • ⅓ cup of softened butter
  • 1 ½ teaspoon lemon zest from one lemon
  • 8 ounces of cream cheese
  • 1 teaspoon of lemon juice


First, preheat the oven to 350 °. Grease and flour a 9 x 13 mold.

Then, place 1 ½ tablespoon of lemon juice in a measuring cup. Top with 1 ½ cups of milk. Put aside.

Mix the banana puree with 1 tablespoon of lemon juice, set aside.

Beat together butter, brown sugar and white sugar until combined. Add the eggs one at a time and the vanilla. Blend on high until light and fluffy (almost the texture of frosting).

Combine flour, baking soda and salt in a medium bowl. Alternate adding the flour and milk mixture to the egg mixture, stirring just enough to combine. (Do not over mix). Stir in the bananas. Pour into the prepared pan.

Place in oven and reduce heat to 300 ° F. Bake for 60 to 70 minutes (see note below) or until toothpick inserted in center comes out clean (do not overcook ).

Remove from oven and place in the freezer for 45 minutes to make the cake even softer. Let cool completely before frosting.


Beat together butter and cream cheese until fluffy. Add the lemon zest and juice.

Gradually add the powdered sugar until you reach the desired consistency. Spread over the cooled cake. Happy Cooking Time.

Recipe Notes

The baking time for this cake may vary! Mine takes about 60 minutes. Check your cake at 55 minutes, if it's not ready, continue baking until a toothpick comes out clean (this may take up to an additional 20-30 minutes depending on your oven).
