 Lemongrass Chicken



Lemongrass Chicken (Lemongrass Chicken Pressure Cooker)! Your family will enjoy these super delicious Vietnamese Lemongrass Chicken Thighs full of a posh sweet-salty-umami-lemon flavor and aroma. Great chicken recipe but super easy!


INGREDIENTS

▢5 - 6 chicken thighbones (1106 g)

▢3 sticks (55g) of lemongrass, thinly sliced whites

▢6 (23g) garlic cloves, chopped

▢1 (23g) shallot, thinly sliced

3 pieces (6 grams) of ginger, thinly sliced

▢3 tablespoons (45 ml) of fish sauce

▢3 tbsp (45 mL) regular soy

2 Tbsp (30 ml) juice from 1 fresh lime

▢3 tablespoons (45 ml) cold water

▢2.5 tablespoons (32g) sugar

Decoration:

▢ Leeks, thinly sliced


INSTRUCTIONS

1.Soak the chicken thighs: Put 6 chopped garlic cloves, thinly sliced shallots, thinly sliced ginger, thinly sliced lemongrass and a couple of .5 tbsp. (32 grams) sugar in a moment Pot. Add 2 tbsp. Tbsp (30 mL) juice , 3 tbsp. Tbsp (45 mL) fish sauce, 3 tbsp. (45 mL) regular soy and three tbsp. (45 mL) cold water, then mix well. Add 5 to six chicken thighbones (skin side down). Place the inner jar of the moment Pot within the refrigerator, then let it soak for a minimum of 1 to three hours.

2.Pressure Cooking for Lemongrass Chicken: After soaking the chicken within the instant pot, turn the chicken in order that the skin is facing upwards.

3.Close the duvet and switch the vent knob to the sealing position. Cook under high for 7 minutes + 10 minutes of natural release. After 10 minutes of natural release, release any remaining pressure and open the lid.

4.Thicken and season: order the chicken thighs. Then bring the liquid mixture back to a boil using the "Sauté" button. Taste and season the lemongrass mixture if necessary (it should be quite salty).

* Pro Tip: If you would like a sweeter lemongrass sauce, add more sugar .

5.Mix 1.5 tbsp. (22.5 g) cornstarch with 2 tbsp. (30 mL) cold water during a small bowl . Add the cornstarch mixture one-third at a time to thicken the lemongrass sauce until it reaches the specified consistency.

* Note: The lemongrass chicken is fully cooked.

6.Optional step to reinforce flavor - Bake chicken within the oven: during a baking dish, coat the chicken with a delicious lemongrass sauce. Place the drip pan under the grill for five to 7 minutes until the chicken skin is golden brown.

7.Serve the Lemongrass Chicken: Instant Top Pot Lemongrass Chicken with chopped green onions, then serve. Enjoy!
