 Melting Potatoes

Melted potato melts in your mouth. This delicious entremots of potato goes great with beef roast .


3 large red potatoes or 4 medium potatoes

10 tablespoons unsalted butter divided

2 tablespoons oil

1 cup chicken broth

2 cloves of garlic, puree

4 sprigs of fresh thyme see NOTES

Halal salt

Coarsely ground black pepper


1.Preheat oven to 400 degrees F.

2.Preheat an outsized oven-proof skillet over medium-high heat (I used a 12-inch forged iron skillet).

3.Peel the potatoes; cut round ends. Slice the potato into 1 inch thick slices. Pat the potatoes dry with kitchen paper.

4.Add oil and 4 tablespoons of butter to a hot skillet. Sprinkle the potatoes with a touch kosher salt and a touch coarse pepper.

5.Place the potatoes within the skillet and bake for about 4 minutes, or until they're golden brown. Turn the potatoes over and take away from heat.

6.cut the remaining butter into cubes; forgot .

7.Pour the chicken broth into the skillet. Add thyme and garlic. Garnish the potatoes with the diced butter.

8.Place the skillet within the oven and bake for about half-hour , or until the potatoes are tender. Pour the sauce over the potatoes.
