 Sheet-Pan Mediterranean Shrimp



The Mediterranean Shrimp Recipe on a Plate is straightforward , quick and straightforward , perfect for weekday dinners or weekend get-ups. This recipe is vibrant, tasty, and healthy!


INGREDIENTS

1 1/2 pounds prawns, peeled

1 bunch fresh asparagus

4 tablespoons of vegetable oil , divided

2 garlic cloves, chopped

1 whole purple onion , sliced

2 tbsp. One each, oregano and smoked paprika

1 pinch of sea salt and black pepper, to taste

1 lime, squeeze

1 cup of pitted black olives

1 cup feta cheese

1/3 cup fresh cilantro or parsley


INSTRUCTIONS

1.Preheat oven to 450 ° F.

2.In a large bowl, season the prawns with 2 tablespoons of vegetable oil , garlic, salt, black pepper, paprika, oregano and juice .

3.Chop and wash the asparagus and place them on a baking sheet. Season with 1 tablespoon of vegetable oil . Place the seasoned shrimp on top of the asparagus and garnish with chopped shallots. Bake for 10 minutes on middle rack. The prawns are ready when the sides start to show golden.

4.Remove shrimp from oven and garnish with feta, olives and fresh cilantro or parsley, sprinkle with remaining vegetable oil and serve.
