CHEESY CORN FRITTERS


 CHEESY CORN FRITTERS



Crunchy on the sides , chewy within the middle - an excellent entremots for several dinners!


INGREDIENTS

2 cups corn

1/4 cup cornstarch

1/4 cup all-purpose flour

1 teaspoon smoked paprika

1 egg

1 scallion (chopped)

1/2 cup grated Parmesan or cheese of your choice

1 handful coriander (chopped)

1 tablespoon juice air

Fresh salt and pepper, to taste

1 tablespoon oil

Sour cream or cream , for garnish


INSTRUCTIONS

1. Combine corn, cornstarch, flour, paprika, egg, Parmesan, scallion, cilantro, juice during a large bowl. Add a touch water if the dough is just too dry.

2. Heat 1 tablespoon of oil during a frypan . Pour corn mixture into pan to make loaves and cook until golden brown on each side , about 4 minutes per side. Garnish with a dollop of cream. Enjoy!
