Baked Caprese Chicken

 Baked Caprese Chicken

Grilled Caprese Chicken with Italian Seasoned pigeon breast , Oven Roasted Sweet Tomatoes, Salted Balsamic Vinegar and Melted Mozzarella Cheese.


3-4 large chicken breasts

2 tablespoons vegetable oil

3/4 teaspoon dried basil

3/4 teaspoon dried oregano

1/4 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon pepper

1 1/2 cups fresh tomatoes like Campari or Raisins, halved or quartered

1/3 cup diced purple onion

3 tablespoons balsamic vinegar

2 tablespoons sugar

1 1/2 cups grated mozzarella cheese or 4 to eight slices fresh mozzarella

Optional decoration:

Fresh Italian parsley or basil diced


1.Preheat the oven to 425 degrees.

2.Place the chicken breasts during a baking sheet or forged iron skillet. Sprinkle with vegetable oil , basil, oregano, garlic powder, salt and pepper.

3.Place the halved tomatoes and diced onions round the chicken.

4.Sprinkle with balsamic vinegar and sugar .

5.Bake for 18-24 minutes, counting on the thickness of the pigeon breast .

6.Once the chicken is cooked, sprinkle with mozzarella.

7.Set the oven to bake and place a baking sheet or pan on the highest rack. Bake for about 5 minutes.

8.Sprinkle with fresh basil or Italian parsley .

9.Serve with balsamic and spaghetti sauce over chicken.
