Season the diced chicken with salt, pepper, Italian seasoning, and pepper and lemon seasoning. Add flour and stir to coat. Fry in vegetable oil until golden brown and cooked.
1 lb pigeon breast , diced
Salt / Pepper, to taste

teaspoon lemon pepper seasoning
3 tablespoons flour
2 tablespoons vegetable oil
2 tablespoons salted butter
8 ounces angel hair paste
6 tablespoons salted butter, separate
5 cloves of fresh garlic, chopped

1/8 teaspoon red pepper flakes
cup of freshly diced tomatoes
cup coarsely chopped parsley
2 tablespoons fresh juice
pasta water cup
cup grated parmesan cheese
Asiago cheese cup, grated into blocks
1.Before you begin : Measure all the ingredients so they're able to use before you start, because this recipe is quick! Time for boiling water to be ready for pasta at the top . Cooking angel hair will only take about 4 minutes. Remember to order pasta water cups.
2.Dry the chicken completely. Sprinkle lightly with salt and pepper. Add 1 teaspoon of Italian seasoning and teaspoon of lemon pepper seasoning. Sprinkle with flour.
3.Heat 2 tbsp. vegetable oil and a couple of tbsp. butter over medium-high heat. Add chicken and broil, 3 to 4 minutes per side, until golden brown and cooked through. Remove and put aside , cover with foil to stay warm.
4.Reduce heat to medium and melt 1 tbsp. butter within the same pan. Add the garlic and cook.
5.Slowly add the wine and cook for about 3 minutes, until it's reduced by half and there's not any smell of alcohol. because it boils, use a silicone spatula to wipe the remaining chicken from the pot. this is often called "like" and can give the sauce more flavor.
6.Melt 4 tbsp. butter within the pan. Add the cooked chicken, red pepper flakes and chopped parsley. Toss to coat. Reduce heat to low. Stir in 1 tsp. cold butter.
7.Boil pasta and reserving 1/2 cup water.
8.Take a sealed jar or Tupperware container and add a cup of pasta water, juice , Parmesan, and Asiago cheese. Cover and shake to mix .
9.Add the drained pasta to the pot of chicken and pour the pasta water mixture over it. Use kitchen tongs and stir to coat. Season with additional salt.
10.Serve with bread with cheese and lemon wedges. Sprinkle with fresh cheese and extra parsley/red pepper flakes.
