Olive Garden Chicken Scampi
This dish has long been one of my favorites to make…actually I've been making it since I first went to Olive Garden for a long time.
INGREDIENTS
1 tablespoon vegetable oil
6 chicken fillets
1 cup flour
1 tablespoon Italian seasoning
Salt pepper
1 pound angel hair paste
1 red, yellow and green bell pepper each, sliced
1 purple onion , sliced
1 tablespoon butter
4 cloves garlic, chopped
1 cup chicken broth
1/2 cup dry wine
1/4 cup cream
1/2 cup grated Parmesan
Parsley, for garnish
INSTRUCTIONS
1.Combine flour and Italian seasoning during a large bowl. Dip the chicken fillet into the batter, then season with S&P. Heat the vegetable oil during a large skillet over medium-high heat and sauté the chicken for 3-4 minutes per side until cooked through. Remove from heat.
2.Without cleaning the pan, add the peppers and onions to the pan, season with salt and pepper and sauté for 4 to five minutes until tender and crispy. Remove from heat.
3.Meanwhile, cook pasta during a pot of boiling water over high heat then drain and put aside .
4.Melt the butter during a skillet, then sauté the garlic for 30 seconds until fragrant. Stir in chicken broth , wine and cream , bring back a boil. Add Parmesan and stir until well.
5.Add the pasta and vegetables to the saucepan and stir gently to mix . Serve with chicken fillet and garnish with fresh parsley and more Parmesan if desired. Enjoy!
